Objectives

The primary objective of this tender is to invite qualified and experienced catering enterprises, coffee shop operators, and franchise houses to establish and operate a high-quality coffee shop within the Glodina Factory Shop premises in Hammarsdale. The initiative aims to enhance customer experience, increase foot traffic, and provide quality food and beverage services to external shoppers and factory visitors.

Scope

The scope of the project includes:

• Establishment of a coffee shop within the Glodina Factory Shop in Hammarsdale.
• Design and setup of the coffee shop, including layout, décor, seating, counters, and display units.
• Provision and operation of coffee machines, refrigeration, and other necessary equipment.
• Offering coffee, beverages, light meals, and snacks.
• Managing daily operations, staffing, and waste management.
• Ensuring compliance with safety, hygiene, and food handling standards.
• Submission of safety files, cost breakdowns, and concept layouts as part of the proposal.

A site viewing will be held to facilitate assessment and questions from interested parties.

Technical Requirements

Proposals must address the following technical aspects:

• Aesthetic appeal and functional layout, including seating, counters, and décor.
• Provision of coffee machines, refrigeration, display units, and other equipment.
• Staffing plan detailing number of staff, roles, shifts, and PPE requirements (uniforms, gloves, masks, hairnets).
• Safety and hygiene protocols, including compliance with food safety regulations, cleaning schedules, and hygiene standards.
• Preparation of a safety file with risk assessments and compliance documentation.
• Cost breakdown covering initial setup costs, monthly operational costs, and revenue projections.
• Concept layout or visual sketch of the proposed setup.
• Credentials demonstrating safe food handling, including certifications and training records.

Skills Requirements

Proposed operators should demonstrate:

• Experience in managing or operating coffee shops or similar food service establishments.
• Barista skills and customer service expertise.
• Knowledge of hygiene protocols and food safety standards.
• Ability to develop and implement effective daily operations, peak hour strategies, and waste management practices.
• Capability to prepare detailed cost and revenue projections.
• Provision of relevant certifications and training records related to food handling and safety.
